The chef

Claire Heitzler started her training in a general culinary school before specialising in pastry with Relais Desserts Pastry Chef Thierry Mulhaupt in Strasbourg.

To go further in her training, she joined the team at the Troisgros restaurant in Roanne (3 Michelin stars) as assistant pastry chef. She subsequently joined Georges Blanc’s restaurant team in Vonnas and Jean-paul Abadie’s in Lorient. 

In 2003, Claire wanted to discover the world and became pastry chef in L’Oranger restaurant in London. One year later, Chef Alain Ducasse asked her to become the pastry chef of his restaurant Beige Alain Ducasse in Tokyo, Japan. She stayed there for 3 years and then joined the Park Hyatt hotel in Dubai as executive pastry chef managing the pastry menus for the 10 restaurants in the hotel. Head-hunted by the famous Ritz hotel in Paris, Claire returned to France to work as pastry chef alongside Chef Michel Roth. In 2010, she joined Lasserre restaurant in Paris as their pastry chef. She became famous thanks to her “Séquence Sucrée”, an audacious menu dedicated to pastry, using fruits and vegetables and respecting the traditional hierarchy of a menu. In 2016, she became the creative director at Maison Ladurée, where she worked on giving a more modern touch to their pastries by working on quality, seasonality and profitability for their pastries sold in France and abroad.

The maximum number of participants per establishment is 2.

All places are on a first come, first served basis.

If you are booking an event more than 6 weeks in advance a non-refundable 30% deposit is payable on registration to 
secure your place. The balance must be paid within 6 weeks of the course date. If you are booking an event less than 
6 weeks from the event date then the full fee is payable on registration. Your participation at the event will only be
confirmed once we have received full payment. 


If you cancel in writing at least 6 weeks before the event we will refund the price less the 30% deposit.
No refunds will be given for cancellations within the 6 weeks preceding the event.

  • We would ask that you bring your chef’s jacket
  • TheTasteLab will provide all materials and equipment
  • Each participant will be provided with an apron
